Panellets

Ingredients

  • 250g of sugar
  • 1 lemon peel (just the yellow part)
  • 150g of almonds
  • 50g of cooked potato or sweet potato
  • 1 egg white
  • 200g of pine nuts
  • 1 egg

Elaboration

Pour the sugar into the glass and glaze it for 20 seconds at speeds 5-10 (progressively). Add the lemon peel and repeat the operation. Add the almonds and cook for 10 seconds at speed 6. Add the cooked and cold potato and sweet potato and the white one and mix 6 seconds at speed 6. Remove the dough from the glass, pour it into a plastic bag and let settle in the refrigerator for at least 12 hours. Form small balls with the dough, embed the pine nuts and place them on a baking tray, preferably lined with parchment paper.

Beat the egg, and brush the prepared balls with it. Place the tray in the oven, preheated to 180º and bake for approximately 10 minutes.
